This definitely is an “Oh My Gosh” recipe. My son and I were home one evening sitting around watching TV so I thought I would get my butt off the couch and make something. We already had eaten dinner so I thought, dessert! I absolutely LOVE custard so decided to go with that. When the custard was done I couldn’t wait to taste it, and here is how it went: “Oh My Gosh, Oh My Gosh, and Oh My Gosh!” You should have heard my son laughing. The next morning I couldn’t wait for my husband to taste it so he could give me his opinion, and here is how it went: “Oh, Oh, Oh My Gosh”. Can you tell how excited I am about this recipe? Give it a try, I don’t think you will be disappointed. This recipe is Paleo but if you are trying to lose weight remember that dessert is dessert! (1 ramekin is approximately 100 calories).

PALEO CUSTARD 5 eggs 2 tsp vanilla extract 2 cups almond milk 1/4 cup honey 6 ramekins Preheat oven to 325 degrees. In a saucepan, combine the milk and honey. Bring to a simmer. Remove from heat. In a medium bowl whisk together the eggs and vanilla until the yolks are very smooth. Add the warm milk and honey to the eggs, whisk together until well combined. Spoon egg mixture into the ramekins. Place ramekins in a baking dish big enough so the dessert cups do not touch one another. Pour warm water into the baking dish so that it is just below the top of the ramekin. Carefully, place the pan in the oven and bake until custards are set around the edges, 45 – 60 minutes. You can eat them warm or place them in the refrigerator for later. They will continue to set up as they get cold. I experimented with toppings. I topped one custard with raspberries and grated 85% dark chocolate and the other with nutmeg sprinkled on top. They both were very good but plain is just as good! You could also add 1 tsp ground cinnamon or any other flavoring to the egg and vanilla mixture if you want to change things up.
